This is my take on Finnish salmon soup; creamy, simple, and the definition of cold weather comfort. The broth starts with stock, onions, and peppercorns, then gets loaded with potatoes and salmon before finishing with butter, cream, and dill. It’s the kind of soup Finland does best: minimal ingredients, no drama, just really good.

How to make salmon soup?

In a large pot, bring vegetable stock, clam juice, chopped onions, and peppercorns to boil. Lower the heat to medium, add potatoes and boil for 10 minutes. Then add the salmon pieces and boil for another 10 minutes. Lower the heat to medium low and add butter. Once the butter has melted pour in cream and simmer for 5 minutes. Salt to taste. Serve hot with fresh dill!

Tips

  • Serve with lots of chopped fresh dill!

  • Traditionally Finnish salmon soup is served with rye bread on the side.
